Visitors to Southside Bakery, located just off Johnston Street, often find themselves waited on by any one of three generations of the Guilbeau family. At any time you will find three generations working side by side. Sammy doesnt take it easy on his employees because they are his children or grandchildren, or even his wife, who began cake decorating as a way of expressing her artistic abilities. In fact, he takes a stern approach when it comes to any change in the business citing consistency and tradition for the family business' success.
To this day he weighs every ingredient every time in all of the recipes and the hamburger recipe, which has generated much attention around town, was three months in the making. The precision and passion he has about baking was instilled in him at an early age. After growing up in the Dixie Cream Donut shop, owned by his parents, he learned the business of baking and Sammy knew by the sixth grade that he wanted to be a baker. Having the support of family and the passion for baking makes Southside Bakery a unique spot for Acadiana families trying to carry on the traditions of slow mornings in Lafayette.
